Convection Heaven

I am always looking for quick recipes that really pack a flavor punch.  Unless I plan way ahead (teehee) and marinate or slow cook, the food needs to have something sassy added to it so it will taste great.  I have one recipe is already delish, but how did it fare in our new range?

One of the absolute best features of this Frigidaire range (there are many, stay tuned) is that it is also a convection oven.  With one push of a button the temperature converts and the food rejoices.

Here is my quick and easy recipe for Panko Dijon Chicken, made in the convection oven (you can bake it normally, of course, but you would cry if you knew how much better convection tastes).

Panko Dijon Chicken

1 package fresh chicken tenders (or breasts, sliced in half)

1/2 cup panko japanese style breadcrumbs

1/2 cup fresh parmesan cheese (grated)

1 egg

2 tbsp dijon mustard

Salt & Pepper to taste

Beat the egg in a bowl and add the mustard.  Set aside.  Combine the panko and the cheese in a bowl and set aside.  Season both sides of each piece of chicken with salt and pepper or whatever suits your fancy.  Dredge the seasoned chicken through the egg and mustard mixture and then through the breadcrumb mixture until well coated.  Place all chicken into a baking dish and bake on 375 (less if using convection, check your range for conversion directions or just hit “convect convert” if you have my awesome range) until cooked through and golden brown on the outside.

The chicken is SO EASY, crunchy on the outside and soft and moist and perfectly cooked on the inside.  A win-win all around!!  Serve with steamed rice and a green salad and some soy sauce and enjoy!
